National Pancake Day : Buttermilk Pancake Recipe

This year National Pancake Day is March 12.  I almost missed sharing my favorite buttermilk pancake recipe.  Every day should start with breakfast and these are hands down the best pancakes.  It will make you stop using pancake mix.   I found this recipe on AllRecipes.  You can adjust the recipe depending on my number of servings you want to make.

Ingredients

  • 5 eggs
  • 1 1/2 cups milk
  • 6 tablespoons butter, melted
  • 5 cups buttermilk
  • 5 cups all-purpose flour
  • 5 teaspoons baking powder
  • 5 teaspoons baking soda
  • 1 pinch salt (optional)
  • 5 tablespoons sugar

Directions

    1. In a large bowl, whisk together the eggs, milk, butter, and buttermilk. Combine the flour, baking powder, baking soda, and sugar; stir into the wet ingredients just until blended. Adjust the thickness of the batter to your liking by adding more flour or buttermilk if necessary.
  1. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Continue with remaining batter.

I am convinced buttermilk makes everything extra good.   If you are looking for a new recipe for weekend breakfast, this will be a treat for the whole family.  Don’t forget the maple syrup.

Foodie: Favorite Local Breakfast Cafe

In September, my daughter and I were searching a local place to have breakfast.   I remembered hearing about Nudy’s when I lived in Chester county.

Breakfast is my favorite meal of the day especially on the weekend.  It’s even better when someone else is making the meal.   My daughter is a huge fan of pancakes.     I ordered an egg white omelet loaded with veggies and an order of home fries(really hash browns) with a cup of java.

My daughter ordered a short stack of blueberry pancakes.   Just so you know the short stack is an order of 2 pancakes vs. 3 pancakes in a regular order.

During our spring break staycation, all three of us went for BREAKFAST.   It was a true pancake feast because we all ordered pancakes.

Cooking and Baking By Me: Buttermilk Pancakes

phonto (31)My favorite meal is BREAKFAST! I love comfort foods and pancakes is definitely a favorite.   The only time I have for a full breakfast is the weekend.   This is my favorite recipe for buttermilk pancakes that I found on allrecipes.com.

You can modify the recipe based on the number of servings.  The below recipe is for 12 servings.   Enjoy!

INGREDIENTS:
5 eggs
1 1/2 cups milk
6 tablespoons butter, melted
5 cups buttermilk
5 cups all-purpose flour
